This is a workshop to learn the basics of one of the most festive French delights, the Croquembouche. Traditionally used for weddings, this tower of choux puffs with custard filling has become a winter holiday sweet.
Traditional Croquembouche towers can rise to several feet high, built from the humble choux. LIke many French recipes, the choux uses simple ingredients, but relies on steps that require an eye for texture. The demonstration will focus on showing how each step is executed to achieve the perfect choux. Guests have the choice of assembling a small version to take home or simply observing the demonstration - but everyone in attendance will enjoy the sample tower. Andre Comandon, the original chef of the Newberry Cafe, will share his expertise in this workshop.
This event is part of TAUNY's Kitchen Stories series, which invites home cooks to prepare a meal in The TAUNY Center’s demonstration kitchen and share stories and memories associated with a beloved family recipe or cultural food tradition. Participants can help prepare food, learn how to cook special dishes, and get to know each other.
